Icicle Sunday

4 cups of sugar = $0.80
1 cup of light corn syrup = $0.60
1 new electric mixer = $20.00
1 container clorox wipes = $2.99

You make divinity for the first time!

I thought I would try to make divinity today. Ha. Won't do that again! My mixer was smoking and had hardened corn syrup hanging from the front of it that looked like the icicles in the pictures above. (It is now in the trash can) I probably shouldn't have tried to pour the candy syrup into the bowl and mix at the same time! I had divinity splatters all over the counter, the walls, the stove, the spice rack, my sweatshirt... I finally called for Brian's help (never do that unless I am desperate because his help is not really helpful sometimes) when I was trying to spoon it out onto the wax paper and the stuff in the bowl was turning into a rock, like cement drying. Well.... here is a picture of the wonderful divinity I made...

Mama's Divinity ~By Paula Deen
4 c. sugar
1 c. white corn syrup
3/4 c. cold water
3 egg whites
1 tsp pure vanilla
2 c. chopped pecans (I didn't add this because Brian whined like a toddler when he found out I was going to...)

In heavy sauce pan over med. heat, stir together sugar, syrup, and water. Stir only until sugar is dissolved. Do not stir after that. Cook to 250 degrees (hard ball stage).

While cooking beat egg whites to stiff peaks. Carefully pour slow steady stream of sugar mix over egg whites while beating on high speed (this is where my mixer got icicled). Add vanilla and continue to beat until mix holds its shape, approx 5 minutes. Stir in pecans.

Using 2 spoons (plus your husband's 2 spoons) drop onto wax paper using one spoon to scoop off the other. If candy becomes too stiff (like concrete), add a few drops of hot water. Work fast!! (before you have one huge divinity ball the shape of your bowl)

Cool on racks completely. Store in air tight container up to 2 weeks.


Brian says it "ain't too bad". In his terms... that means it is pretty darn good!

OMG LOL! You sound so much like me!

My mother made this for us as children and I remember she used to dye it red and green.

That is one of my favorite memories of her.

Hey if hubby eats it, you are ok!

Ooh, these sound yummy, but I am afraid that I will end up with a bowl of concrete, lol! I might give them a try on the weekend and see what I come up with.
